How do car amps work? Subs help?

Say I buy a 1800W amp, and I buy subs which run on 1200W. Do I have 600W leftover as spare?

And say the car speakers are 1000W. What will happen if I go 400W over the amps limit?

First thing that I’m curious about is the huge numbers you’re throwing around for these amps, speakers and subs.

1800w amps are fairly rare, expensive, and sometimes require electrical system upgrades in order to run properly. So make sure you’re looking at RMS power numbers, not the max power ratings commonly seen stamped in plain sight — they are meant simply to grab the attention of the uninformed.
1000w speakers (non-subs) are non-existent to the best of my knowledge.

To answer your question –
amps don’t care what they’re connected to, just its impedance/resistance.
For example –
An amp is rated at 100w by 2 channels into 4 ohms.
If it is connected to 50w 4 ohm speakers it will deliver 100w to them up until they overheat and are damaged.
If that same amp is connected to 500w 4 ohm speakers it will still deliver 100w.
